2022 Solar Sangiovese Fresco
Bristling light red. Strawberry, tart cherry, spice and earth. Savoury and bright - drink lightly chilled, or not.
Killara vineyard at Seville East in the Upper Yarra Valley. Vines planted in 2006 on own roots, at density of 2000 vines per hectare. A mix of premium Sangiovese Mat 6 & Mat 7 clones. Sustainably farmed and picked at 12.2 baume, 3.17 PH and 7g/l total acidity. Whole-berry, semi-carbonic fermentation by wild yeasts. The cap was plunged daily until the ferment slowed. After approximately two weeks of maceration the wine was pressed and filled into neutral oak barrels for 6 months. Bottled in Nov 2020 without fining or filtration. Minimal sulphur addition takes place at bottling.
