Merbein vineyard in the Murray Darling Region. Sustainably farmed on red sand and limestone. Vegan friendly.
The darling of Emilia-Romagna - 100% Lambrusco Maestri. Hand-picked early at 11.7 baume, 3.6 PH and 8.3g/l total acidity.
Foot-treaded three times daily until ferment began. Pressed early for lower extraction and fruit balance.
Re-fermented in bottle without fining or filtration. Col Fondo style (with the bottom) retains a natural sediment.
No sulphur added at bottling. Aged on lees for 8 months after fermentation.
