Strawberry tops, crushed violets and a carbonic bluefruit lift, with fresh earth, truffles and a fresh thyme spice. Pomegranate and watermelon juice, soft tannins and a frisky, juicy acidity. Serve cool with Yo La Tengo's Fade.
Hand harvested at 12.8 Baume on the 17th of March. A blend of de-stemmed and carbonic treatments. Wild Yeast fermentation, Pressed to old 225L French Oak Barriques for 6 month elevage. 12.8% Alc/Vol. Approx 7.6 standard drinks. Bottled unfined and unfiltered with minimal sulphur.
