Bright blush, fresh salmon pink with high notes of Rosehip tea, compote and potpourri, finishing with white pepper and strawberries. The palate is crisp and dry and leaves a very groovy trail of strawberries and cream, backed by some herbal savoury notes and finishing with a clean fresh palate. Long and dry, smooth and complex.

After our usual supply of Grenache from the Marananga region of the Barossa was destroyed in a freak hail storm in late 2021, we needed to seek another solution to our Rosé. The opportunity was presented to source Mataro grapes from the Chalk Hill vineyards of McLaren Vale. This fruit is grown organically and allows us to keep producing the type of wine we love to make.

Night harvested. Whole berry pressed in the pneumatic bag press for over an hour, provided the colour was suitable. The juice was chilled down to below zero, aiding the stabilisation process, and when racked, the ensuing juice was then allowed to naturally warm and begin fermentation with natural bentonite clay. This again aids stabilisation and assists in the prevention of “off ” characters in the fermentation. After a steady 16-day cool ferment, the wine was again chilled below zero to settle the solids and racked as a clean-finished wine.
