1. 50% whole berries (hand)destemmed over 50% whole bunches
2. Foot stomped on day 3 and again on day 10
3. 1 month on skins
4 Free run only was racked into a single “house smoked” with applewood smoke Francois Freres FO Puncheon
4. 5 months elevage on full solids with battonage being undertaken once per month
5. Single racking into stainless prior to bottling on the 1st of August, 2022
