75% 2019 ORGANIC CIDRE' (LENSWOOD, ADL HILLS) + 25% 2021 ORGANIC KUITPO GEWURZTRAMINER (ZERO/ZERO)
2019 Cidre' - 2 barrels of cidre' were produced in 2019 using 5 different varieties of "eating apples" - Jazz, Golden Delicious, Granny Smith, Fuji and Pink Lady
- Apples were "direct pressed" into seasoned hogsheads to undergo primary fermentation and then remained in oak, untopped and on full solids, for a period of 36 months of elevage
2021 Gewurztraminer was picked a month earlier than our "5 year pick date average"
- 80% wholeberry destemmed over 20% whole bunches
- 10 days @ 2 plunges per day in a single 1T stainless fermenter
- Locked down for a further 8 months on skins
- 10 months elevage in a single Francois Freres Puncheon
