2022 Curio
Curio - (Cabernet/ Mataro/ Syrah). We were curious what three "big bold Barossa" varieties will look like in a blend within our style. We are 100% whole berry. The most interesting thing I find here with this wine is each grape's personality is on show, not hidden behind oak or alcohol. I find it fascinating how pretty these three Barossa varieties look picked early.
100% whole berry across all ferments, soft punch downs to keep the cap moist during ferment, no pump-overs, extremely soft handling. All early picks, bar the Mataro that was out to hang till 13.5 Be to warn off any 'greenness'.
The weight here is quite light, all parcels were fermented, pressed and put to barrel separately, and blended pre-bottle.
Who'd think Cab/Mataro/Syrah could look so soft & pretty?
“In the winery, we hand-tend to every ferment. Every ferment is small. We basket press all wines. We use old oak and let our red wines go through natural malolactic fermentation. All of our red wines stay on lees until just prior to bottling, usually just prior to summer in the same year. We bottle, cork, hand label and wax every bottle ourselves. True control from vine to glass and a true labour of love. We do not add sulphur, bar a touch pre-bottling. The resulting wines are light, naturally balanced and what we love to drink.”
