Handpicked Grenache and Tempranillo from neighbouring rows in the same Yallingup vineyard, picked on the same day for a true field blend. Co-‐fermented with a layered mix of whole bunches, whole berries and crushed fruit.
What a nose….this light to medium-bodied co-ferment is complex! Strawberries and cream, plum, liquorice, bay leaf and dark cherry come to mind. Acid-driven with feathery tannins, the palate bursts with raspberry, strawberry and pink marshmallows flavours.
Fermented with wild yeast, zero oak, unfined and unfiltered.
Vallée du Venom is Rhys and Emma Parker and their ‘Urban Micro Winery’ in Dunsborough, Western Australia. The winery is located in the north of the world-renowned Margaret River Wine Region.
With access to premium vineyards and reliable maritime climate vintages, Vallée du Venom produces small-batch, terroir-driven wines centred around a minimal intervention ethos.
Without the benefit of inheriting vineyards or a winery nor wishing to relinquish control to a third-party winemaking facility, Rhys and Emma started from scratch. Converting a bare, concrete warehouse in the heart of Dunsy into a winery, the Urban Micro Winery concept was as much a necessity as it was a vision.
