"The Wild One" 2021 Shiraz Cabernet is a beautiful blend of Shiraz and Cabernet Sauvignon. Vegan friendly.

LOOK FOR:

Mocha nose with a hint of bay leaf. Plum, raspberry and subtle oak flavours with a long balanced finish and fine lingering tannins.

DRINK WITH:

BBQ meats, roast lamb and cheese plates.

TECHNICAL STUFF:

One of our most popular wines, the 2021 Wild One Shiraz Cabernet has been sourced from two completely new vineyards to Dirt Candy. The Shiraz fruit was machine harvested from old vineyards in the Upper Hunter whilst the Cabernet Sauvignon came from a small vineyard on Old North Road in Pokolbin. Fermentation then occurred in large open fermenters. "The Wild One" was then pressed off before being matured in old French Oak puncheons for six months. It was then hand blended to give a final mix of 50% Shiraz and 50% Cabernet Sauvignon. The resulting wine is fresh and bright with an elegant bouquet. This wine can be enjoyed young or with correct storage will continue to develop complexity in the bottle for the next 7+ years.
