Promise Schioppettino

I’ve made this wine for a few years now. I was interested in going a bit beyond the usual suspects like Sangiovese and Nero D’Avola (I also make wines from both of these varieties) and I tried an Italian Schioppettino which I found a really interesting wine, but traditionally it’s aged in barrel for many years, then again in bottle for years before release. I decided to do the opposite, treat it very gently during fermentation and release it early to maximize the fruit expression. Not adding any Sulphur seemed to complete this approach.

Apart from their approach to viticulture, which is to use organic practices where possible and avoid herbicides, these guys know these Italian varieties so well. They identify them at the source and bring them into Australia through their nursery and when they picked a site to plant vines they chose very well.

This vintage is being referred to as a unicorn vintage – rare, near-perfect conditions. Schioppettino can be a fairly low acid wine, but the 2021 conditions meant there was plenty of time for the flavours to ripen beautifully with good acid retained. The fruit looked excellent when it came in and I think the wine honours that fruit!

Vineyard - The Chalmers Heathcote Vineyard is an east-facing sloped site comprised of the famous red Cambrian soils of the area. The lower vineyard is deep red clay-loam while the higher vineyard is complex rocky terrain of ironstone, dolerite, green basalt and jasper. Chalmers aims to follow organic farming principles where possible and are transparent in their communication when it is not.

Winemaking - Bunches were destemmed, leaving the berries as intact as possible. Wild yeasts were allowed to complete the fermentation, with the cap being rolled under the juice by hand once a day for 22 days, before being pressed to old neutral French oak barrels. There have been no additions to this wine (preservative-free), and there has been no fining or filtration.
