Charlie separated that fruit into three open fermenters, and let it sit on the skins for varying lengths of time with some batches for up to 50 days. This gives the wine a killer savoury tannin while still keeping that fresh fruit and acidity from the shorter skin contact. Expect notes of red and purple fruit, a little spice, and a hint of orange peel.
Minimal Sulphur. Wild Yeast. Vegan Friendly.
