2022 Cabernet Sauvignon

Handpicked Cabernet Sauvignon from Yallingup in the north of the Margaret River wine region. Open fermented with wild yeast and aged in French oak barriques for 18 months prior to bottling. Unfined, unfiltered, vegan friendly with minimal sulphites. Dark ruby red in colour with an eclectic mix of varietal aromas bursting from the glass – dark plum and blackcurrant dominate with liquorice, cinnamon and nutmeg in the background courtesy of time spent in old French oak barriques. In the mouth, this wine is fruit forward and alive with fine grained tannins at the start of the palate drawing dark fruit flavours to the back of the palate in harmony with a supportive acid profile. The result is a long, generous and complex finish. Drinking well now with a cellaring potential for 10+ years.
