2021 Sapidity
Clear bright straw with complex aromas of citrus rind, mustard fruits, frangipani and guava. The palate has an elegant structure of balanced acidity, integrated citrus and a clean finish.
Inspired by the textured and refreshing wines of the Adriatic coast of Italy, this is High Eden Valley Semillon and Sauvignon Blanc with savoury structure and saline notes from 6 days of skin contact. Complex with golden apple and gentle spice.
Sapidity by meaning is "having an appetising flavour". For us, it is a new wine, a new style and something very exciting for Ben Murray and our wine direction. An unashamed food wine, the style lends itself very much to seafood, pasta, dry cheeses, and pleasant company.
Minimal sulphur
Harvested at night to retain freshness and acidity, the fruit was delivered to the winery in pristine condition. Crushed to open ferments in a style more akin to red wine, the fruit was allowed to begin fermentation immediately in contact with the skins. To achieve the secondary and tertiary notes we were seeking in this wine, there was a daily pump over of the juice to cover the skins for 6 days prior to basket pressing. Fermentation was completed between inert tank and French oak barriques to dryness, again adding to the palate structure.
