To make gin with the weed Lantana camara, we needed a few other things first. × Introduced into Australian gardens around 1840 for its flowers, Lantana is a typically ‘Australian’ weed. This amazing smelling Verbena, grows readily in the bush at Redridge. A small sugar farm ↓ & good soil. A distillery & stills↓ from scratch. Spontaneous native fermentation.↓ Rhum/rum agricole.↓ Some spirit becomes gin.↓ This is a family project & we are chuffed with where we have arrived with this unconventional gin.
