First Australian Uvi Di Troia in history - from what we understand
1. Ferment #1; 100% whole berry destemmed. Ferment #2; 50% whole berries over 50% wholecluster.
2. Ferment #1; Pigeage 3 times daily for three weeks before being “locked down” for a further 7 months. Ferment #2; Hand-Plunged once daily for a week being foot-crushed with free-run only racked to stainless
3. Ferment #1; Free-run only racked to stainless after 7 months on skins as an assemblage with Ferment #2
4. 6 months elevage in a single “house smoked” (Spotted Gum) FO puncehon.
5. Bottled under vacuum in July 2022.
