2022 All Seagulls, No Chips

We are exceptionally happy with how our first skin-contact Greco has presented itself. We will continue to learn about this grape but for now we have elevated it to our cuvée series, naming it ‘All Seagulls, No Chips’. An expression that we’ve coined for people who will fight over things that don’t matter.

The 2021-2022 growing season in Heathcote was heavily affected by La Nina weather conditions. The cooler and wetter ripening conditions allowed the Greco fruit to maintain a searing acidity and very high quality despite a challenging year.
We’re always searching for high-acid white varieties to make into complex and textural white wines from Central Victoria. We believe that Greco could be an important variety in the region's warmer future as it retains excellent acidity.
Our Greco went through a very simple winemaking process. It was crushed and destemmed to open fermenters where it fermented dry before being pressed. Free run and pressings were separated before élevage in stainless steel on gross lees. The wines were racked several times prior to bottling and were ultimately blended together to add more mouthfeel and texture to the lighter free-run component.
