Rich apricot and quince. A good shake of green curry leaf. These white grapes had an extended maceration.
The Marsanne and Pinot Gris are from Erawirung Country (Riverland) and Bendigo. The Marsanne had 3 weeks on skins and the Gris had 2 weeks. They both had a heavy press to extract deep, hearty, nuttiness and structure. Aged on lees for 6 months in stainless steel. A few hits of bâtonnage.
Named in memory of Ginger, a rescued greyhound who is now resting peacefully.
