Wild yeast , semi-carbonic fermentation, bottled with minimal sulphur, unfined and unfiltered.

2021 Sangiovese Fresco is available to buy in increments of 1
Killara vineyard at Seville East in the Upper Yarra Valley. Vines planted in 2006 on own roots, at density of 2000 vines per hectare.
A mix of premium Sangiovese Mat 6 & Mat 7 clones. Sustainably farmed and picked at 12.2 baume, 3.17 PH and 7g/l total acidity.
Whole-berry, semi-carbonic fermentation by wild yeasts. The cap was plunged daily until the ferment slowed.
After approximately two weeks maceration the wine was pressed and filled to neutral oak barrels for 6 months.
Bottled in Nov 2020 without fining or filtration. Minimal sulphur addition takes place at bottling.
Bristling light red. Strawberry, tart cherry, spice and earth. Savoury and bright - drink lightly chilled, or not.
