Sang de Terre Shiraz 2019
Vineyard - Sourced from Bannockburn' ˜Original Block'. The soil is generally low-fertility with good drainage, allowing for controlled growth but rich enough that their organic farming principles only require the addition of compost to maintain vineyard balance. Subtle but important soil variations are the result of a continuum of volcanic surface debris and ancient sea beds running to richer and darker soils, layered over predominantly limestone bedrock.
Winemaking - Upon arrival at the winery a quarter of the fruit was layered at the bottom of the fermenters. The remainder was destemmed over the top. The ferments were lightly plunged once a day for 20 days before being pressed to a mix of old and not so old French oak barrels. Aged for 13 months.
No adds apart from minimal sulphur. Wild yeast fermented, unfiltered & unfined.
