The 2021-2022 growing season in Stawell was heavily affected by La Nina weather conditions. The cooler and wetter ripening conditions allowed for longer hang time and the development of more intense spice characters than in most years.
The Grampians is famous sheep country. Not because it is good for grazing, but because most of the soils is desperately unfertile red sand and clays dotted with quartz over a shallow bedrock.
This soil combined with the continental climate is fantastic for Shiraz. It creates the diurnal swing and elongated ripening required for spice formation. Adding to that, the soils are high in potassium and sodium, giving the wines a briney character that often presents as olive tapenade.
In 2022 our Grampians Syrah is a combination of three different harvest dates, combining to offer brighter and darker fruit characters as well as white pepper spice and cardamom pod. All three parcels of fruit were treated similarly, each with 20%-30% whole bunch with gentle punch-downs twice daily. Another key in our house style is extended skin contact. We allow the cap to sink on our Syrah and then allow the wine to stay in contact with the grapes for an additional 7-14 days. This integrates tannin, softening the wine while enhancing flavour.
Our Syrah is then aged in a combination of large format seasoned French oak and a very small amount of second-fill French barriques where it completes malolactic fermentation and rests until bottling 9 months later.
